I'd have to say the engine in yours is missing because the previous owner was in the same situation you are now. They had a tractor that needed an engine, so they bought this as a "parts tractor" and took the engine along with who knows what else...
Frankly unless you have an emotional attachment to this particular tractor, I would advise you to look for a complete MF 1200, 1450, or 1650 to use as the project tractor and designate this one as the "parts tractor."
Apparently Snapper manufactured them so there is an equivalent Snapper model out there that is mechanically identical, just with a different hood and paint color.
If you really want to piecemeal it back together, Kohler K301 series engines were used in many different brands of lawn and garden tractors. I am pretty sure there are groups dedicated to collecting and working on Kohler engines that know them inside and out.
Then there is the option of repowering the tractor with something like a Predator engine. It will take some figuring, some fabrication, and possibly some machining to get it "right" or it can be cobbled together. Really, the options are endless.
