I done this many times as well. I have also learned a few other tricks over the years. One thing that helps for the bolt holes is a set of punches - which I got through manhatten supply. Another thing that works well for cutting the bolt holes is a tapered line-up punch driven through the hole lightly with a hammer. This seems to cut the gasket well and form a nice hole. Lastly, for smaller more precision gaskets I have coated the surface with grease or gear oil, and then basically used it as a stamp to make a nice dark inprint on the material. This way you have a nice outline to cut out with a razor knife. I have made many gaskets leak and haven't had one leak yet.
