We credit electrons for the stuff we call current. This so called "juice" travels at the speed of light (186,000 miles per second) whereas an individual electron travels about one inch per second. So it matters not which way the electrons go just so they go. Old Ben Franklin decided that this "juice" went from + to - in the circuit outside the source (battery). Turns out he guessed wrong but by the time it was proven for sure (mid 1900's) all the symbols that were in use had arrows pointing in the "Franklin juice" direction. Note: Franklin also wanted the turkey to be our national bird. The reason the starter doesn't care which is ground is that it is internally wired with the field in series with the armature and when you reverse the polarity you reverse both, hence no change in direction. Spark plugs work best if the spark jumps from the center electrode to the grounded shell but since the connections at the coil control that, it can easily be changed. To tell which direction said spark is going, pull a plug, ground it and insert a pencil point into the spark and look closely. Happy sparking.
