Bud, Could be one of several things, most likely culprit is a stuck orface valve. If it is the system will ice with prolonged use in the evaporator. When the evaporator ices you will notice reduced cooling and reduced air flow. Bad news is you need a full system evac and open the top of the cab to change it. You mentioned you "overhauled" the system. That is a little broad. Some people use the term meaning a compressor conversion to R 134a, while others use it to describe a full system flush, replace receiver dryer and orface valve, compressor valve change, oil change, and recharge. As far as the charge, that depends too. If they are full 16 oz cans with no oil 3 cans would be a little over full (this is from memory, that a 1070 is full with 3 pounds of R12; R 134a with it's different density woulud be 2# 11 oz. If it is either 12 oz cans or cans with oil added, who knows. Give me some more details and I'll try to help. Also would help to know if the system has been open to air at any time with R12 residue in it. If it has corroded orface valve is a given along with a corrupted receiver/dryer. If it takes a 4 pound charge (lots of those York/Tecumseh systems do it is a little under full, they use 3# 8oz of 134a. Just did look that one up on a Ford 7710 charge day before yesterday. I personally never like to use the cans with oil in them, too easy to over fill the oil and lock a compressor.
