The vast majority of utility and boat trailers that I encounter have a 1 7/8" coupler. When I rent from U-Haul, their 2" coupler adjusts down to 1 7/8", as well. Though I carry a 2" ball mount, I almost always use the smaller ball for loads under 3000 pounds.

The most effective hitch height I have encountered for small trailers is 19 1/4" to the top of the ball. Get a mount that comes close to that, if your vehicle will accomodate it without hitting a spare tire or rear door.
