There are more recipes for cobbler than for bar-b-que, I bet. Here's the one I use, 'cause it's easy and the way I was brought up. Fruit Cobbler 3/4 stick butter (or a whole one, it's my heart) 1 cup self rising flour 1 cup sugar 3/4 cup milk (whole, 1%, skim; doesn't matter) 2 cups or a can of store bought fruit (fresh or canned or thoroughly thawed - some, like peaches or pears canned without syrup, will want a little added sugar - most canned will want most of the syrup poured off. I have, jonesing, used fruit cocktail. Fabulous.) Put butter in 2-quart glass dish Put dish in oven and set to 375 - by the time the oven preheats the butter will have melted Put flour, sugar, and milk in a mixing bowl and mix until the lumps are gone Take dish from oven and swirl butter up around edges - carefully, it's hot Pour batter into dish, then dump fruit into the center Put dish back into oven and bake (uncovered) 45 minutes. The batter will rise up around and over the fruit and turn dark golden brown.
