I dug/pulled the vines and hung them upside down (because it was easier) inside the garage. The tomatoes proceded to ripen "on the vine" for 4 to 6 weeks after we had a killing frost.

Rusty's suggestion also works, though!

I have also had some pretty good green tomato salsa, but I don't have the recipe.
