Jeffcat, most canned foods will keep for several years. I am amazed that any old people are left at all. They ate lots of hogs to include cooking in pure lard and put up all their own food. I can all my own vegetables and even some meat and if it is not sealed the lid will pop up and down when pushed on. I have lots of stuff here now that is 3 and 4 years old and is just as good as it was to start with. I have eaten this stuff for 45 years and have never been sick one day. Other than a dentist I haven't been to a doctor since I was discharged from the service. I do all my cooking in cast iron, which I believe is better for you than the enamal on other types of cookware. My mother in law also believes that is why me my wife or my kids are never sick.
