Could it have a loose/slipping fan belt or clogged radiator (inside or out) or coolant passage clogged with hard water/rust deposits or injector pump not timed to specs or an 'iffy' thermostat (whether new or used)? If thermo isn't always opening like it should, it could be letting the coolant produce bubbles sometimes (as in boiling). You don't want to crack a head by getting it too hot and/or not giving it enough of a cooldown before shutting it off. Let us know what you find.
