In the mean time check the Holley for a power valve that has been ruptured by a backfire. They do get missed or damaged again on the very next backfire. There is a update to protect the power valve.
The power valve maybe opening too soon before the engine is heavily loaded. There are several ratings to choose from.
Reduce the acelerator pump volume until the engine is on the just a notch away from stumble when she's floored.
Is the thermostat a 195F unit?
