Billy, the tomato's are one of the easiest things there is to can. Just scald them in boiling water for a few seconds and pull the skin off. Then pack the jars full add a tbsp of salt and hot water bath for 10 minutes. The sour kraut is really easy as well. I shred it with a food processor and fill jars add one tbsp of canning salt and one of white distilled vinegar put on the lids and sit in a dark place for 6 weeks and you have fine kraut. Some folks ferment it in a stone crock for weeks and then hot bath it to seal jars, but it doesn't need all that. Made in jars is a lot easier and just as good. You can get all the info you need at your local FSA office, or get the Ball Blue Book of canning(available at Wal-Mart) and have at it. It is a lot of work, but it is worth it to me. I can more tomato's then anything. Those new potato's are real good canned too. Then you have green beans and new potato's all year. I also can a lot of hot pickles with onions,cauliflower,carrots,brussel sprouts,various peppers and cucumbers all in the same jar. That is a real looking piece of dirt your plowing there. Should raise a bumper crop.
