When my dad would think his sausage mix was about right, Mother would fry a couple of patties to see if the seasoning was O.K. If it was, we would "stuff" it in casings to smoke and freeze or in the early days can it in Mason jars. If it needed more seasoning, he would mix it in. Can"t really say that those were the "good old days", but my mouth does water thinking about that sausage.
