Your project can be done by gas welding, however you will have to use a lot of gas and filler rod to fill a joint that thick. You will also need to let the joint cool every few passes which can be very time consuming. Either way, you should v out the joint to get proper penetration. If you're planning on using 7018 I would spend the extra money and get the DC welder. 7018 and all the other rods will run much better than they would on AC. Lots less spatter and more controlled arc. This is what allows you to weld thinner materials on DC. Also, dont try and fill the groove joint with one pass. 1/4 you might be able to but the 5/8 you should definitely use multiple passes. After each pass make sure you get all the slag cleaned off as any trapped slag can result in joint failure. If a DC welder is cost prohibitive, you could try the 7018AC but try on a practice piece first. If that doesnt work, try 6013 or 7014 both of which run pretty well on AC.
