Definitely sauerkraut. Nothing like homemade crock sauerkraut. It'll keep in a cool/cold (but not freezing) room for at least several weeks. You've got to keep an eye on the fluid level in the container and replace evaporated water with brine when necessary. When packed down properly, we can fit about 40# into a 5 gallon crock with space to spare.
Cabbage could also be stored in some type of root cellar arrangement. Check with the Extension Service or your local library for root cellaring advice. I suppose you could also google it.
