Sounds like the 6.0 to me.. My 05 company truck is the same way.. Has been since new (And no, I'm not the beat the crap out of it cause I don't own it guy either)
Mine also has a "LAG" issue at any temperature. Sometimes you hope it was a good idea to start crossing the intersection.. Then all at once it takes off and goes.
My problem is since the company leases it, we aren't allowed to work on it ourselves.. and the service garage says nothing wrong with it.. "SEE NO CODES!!"
My old mechanical 7.3 may be underpowered.. but when I put my foot into the pedal I know it's gonna go.
Seriously though, I hope you (or someone) can help you figure it out, then maybe I can get mine fixed too..
