A 12 foot or tad bigger will work fine in fall disking up cornstalks on firm ground.
a 12 foot or smaller will pull pretty tough in spring loose damp plowed ground, traction will be harder to find without duals on a 'small' 5000.
I have a 5200, the bigger engine, taller tractor with bigger rear tires of the 5000 series, and pulled my folding 20 foot JD disk with it. I left the wings up, which made for a heavy disk of about 12 feet. Worked good in the silage corn stalks, but would be a handful in spring ground.
10 foot would probably be 'right', 12 foot should work.
Can always drive faster if the disk is a little small; can't do much if the disk is too big for the conditions....
