There is NOTHING wrong with driving the truck in 3rd. It's actually recommended that you shift down to 3rd if the transmission is constantly shifting back and forth between 3rd and 4th.
I've towed with my 2003 Chevy for 1000's of miles with the transmission in 3rd, and it never threw an engine temperature code. Not once.
The tow/haul button on chevys doesn't give the engine more power or lock out overdrive. It changes the shift pattern of the transmission. That's all.
It will still bounce back and forth between 3rd and 4th if you don't quite have enough power to hold 4th gear.
