In my old home built machine shed, I used the 4' foam water pipe insulation. It wedges into the gap between the ends of the roofing metal and under the ridge cap. It's held up good for several years now.
In another building, the ends of the roofing metal were too far apart, and I used strips of 1" thick closed cell foam nailed to the bottom of the purlins. Purlins on that building lay flat. Don't really like that idea, cause the snow probably still gets in onto the top of the foam, but it seems to be causing no problem. So far.
I'm kinda disappointed in the foam that fits the contour of the roof metal. Some of it stays in place - some of it don't. Might be my fault for installing it wrong?
