The higher voltage will push the amperage through weak, corroded wiring better than the 6V system will, just as a 24V cordless drill will work better that an old 6V drill. The higher voltage overcomes the connection problems better. Properly maintained, a 6V system works just as well as a 12V system. It's not how fast the engine cranks over, it's how efficently the system functions. The higher voltage(8V) is just a bandaid to overcome a neglected wiring system. My super M starts quite easily in cold weather with its 6V system, even with the slow cranking speed. Dad once installed a 8V battery in our 1932 Chevrolet to crank better. Now I've got to replace the starter and clean up the wiring, anyone got a good starter for a '32 Chevy?
